Fermentation and refinery: The grapes are delicately de-stemmed and then undergo soft crushing. The resulting must is left to ferment on the skins at a controlled temperature with frequent pumping over so as to extract color and aromas. Once racking is complete, the wine’s evolution continues in stainless steel vats and barriques.
Alcohol Content: 12.5% vol.
Temperature for Serving: 16-18°C (~61-64°F)
Tasting notes: Intense ruby red with purple reflections. Fruity bouquet with raspberry, blueberry and plum overtones integrated with hints of forest fruits and delicate spices. In the mouth it starts full, dry and velvety, then blossoms into fruity flavors.
Serving Suggestions: Savory first course dishes, like pasta or risotto, red and white meats, boiled meats, game, roasts, and semi-ripe cheeses.
