Typology: Bordeaux red wine blend Production area: Dolegna del Collio Grape variety: 70% Merlot, 20% Cabernet Sauvignon, 10% Cabernet Franc Soil composition: Clay silt Harvesting: by hand, timing varies grape by grape, depending on maturity, from the beginning to the end of October Fermentation and refinery: This blend is created by using carefully selected yeasts, together with enological techniques, advanced equipment (which allows for soft pressing) and modern truncated cone tanks for a flawless fermentation. Fermentation at a controlled temperature between 26 – 28°C for at maximum 15 days. Aged for 18 months in barrels, followed by the bottle for 3 months. Alcohol content: 13% vol. Temperature for serving: 18°C Tasting notes: Color is a deep ruby red with violet reflections. Its fragrance includes leather, liquorice, and intense berries, perfectly balanced with a rich wood undertone that doesn’t overpower. On the palate it is rich, with an incredibly long and satisfactory finish. Serving Suggestions: Its characteristics are highlighted when paired with braised and roasted meat, or hard, aged cheeses. Any rich flavor will compliment this royal blend perfectly.
