Cabernet (2021)

    Harvesting: By hand in October
    Fermentation and refinery: Destemming of the grapes before fermentation. Continued maceration for 10 days with frequent pumping over in the first phase, with subsequent decreasing intensity. Total malolactic fermentation. Aged in stainless steel tanks and barriques for 18 months.
    Alcohol: 13.5%
    Tasting notes: Intense ruby red with garnet nuances. Aromas of blackberries and raspberries with ripe plum, herbaceous and spicy notes along with coffee. The palate is intense and full, with excellent structure and harmony between freshness and savoriness.
    Serving Suggestions: Pairs well with blue cheese, roasted and grilled meat, salami.
